"I had some eggplant fear having never cooked it and having read it can become bitter but this dish was delicious. Even my husband, who normally won't touch half of these vegetables, was impressed. I later used some of the veggies as a pizza topping which was also a hit.
I wasn't a huge fan of the fennel although I liked it more than I..."

"Very tasty! My husband and I both enjoyed it very much and are happy there are leftovers. Sometimes lentil soups seem to be dominated by the lentils but this had a great balance and variety of flavors in every bite. Definitely a winner! I substituted a can of diced tomatoes for the fresh tomato since I didn't have fresh available."

"Very tasty and the yellow-orange color is beautiful also! I didn't have any lemons so I substituted apple cider vinegar for the acid component. I also used frozen corn (10 oz. bag was 3 cups and only pureed half the solids so I could have some intact veggies for variety. I used 1/4 teaspon salt. Excellent flavor that improved over time. Thank..."

"Made this over the weekend from Recipes from the Night Kitchen (my favorite soup recipe book as Triple Tomato, adding sliced cherry tomatoes as a garnish at the end. Delicious! Most of the recipes from the book I used are included in Souped Up! (Sally Nirenberg apparently became Sally Sampson but there are additional recipes in Souped Up! so I..."

"Very tasty! I thought the flavor was great (nice balance of sweet, acidic, and peppery without an extra salt and pepper. My husband liked it as well. I never tried watercress before this and didn't care for it raw so this was a nice way to tone it down. Yum! Note: I recommend draining through a fine mesh strainer/colander (I had trouble usin..."

"I haven't tried this yet but since the reviewers had questions I did a Google search and found the original so I could figure out the details. The link is http://www.molliekatzen.com/recipes/recipe.php?recipe=rice_pie"

"Delicious! I agree it got even better with time with more complex and intense flavor. I also made brown rice separately and added it in some servings for variety and my husband particularly liked it that way. Definitely high on my list - thanks for posting it!"

"Fantastic! My husband kept talking about how moist the chicken was. We made chicken panini sandwiches from this and loved them. The one substitution I had to make was garlic powder for onion powder because I didn't have any. I too like having this spice blend on hand now. I used a regular skillet with 1 1/2 tsp. olive oil."

"Very flavorful and hearty - definitely a winner! I didn't add salt because the broth had plenty. Also I added some extra broth because it got very thick."

"I tested several dressings for Easter veggie salads and my husband practically licked the dish on this one. We tested it with carrot and celery sticks and red pepper. It was delicious on all and I'm sure it would be great on fresh greens as well. Thanks!"
