Located in the Sandhills of North Carolina, I am a psychologist employed by the local school system and work with children with special needs, along with their parents and teachers, to help develop the most appropriate education plan for them.
I am the mother of two and the grandmother of now five delightful and adorable grandchildren and enjoy sleep-overs, carpet picnics, and otherwise spoiling them rotten! As they grow and develop, I marvel in the miracle of life... as well as the simple joys that are so fulfilling.
Cooking for one continues to be a challenge for me and it's hard to cook healthy stuff for dinner after a long day at work when cheese & crackers makes a quick and easy supper. I find that cooking "big" on the weekends helps in that department. I also like the new steaming bags a lot.... top and tail a handful of green beans and a couple of minutes in the microwave... steamed green beans for dinner!
I'm doing well in reducing/eliminating convenience foods and cooking more "from scratch." Yea, me! Doing away w/ "white" foods (white bread, white potatoes, white rice, etc.)... well, I'm still working on that but getting better. Do prefer whole wheat pasta, which I thought I would hate.
My favorite foods include:
1) anything I don't have to cook or clean up after... :)
2) homemade soups and breads
3) homemade sweet potato pie
