    Reviewed Yummy, Healthy Granola

"This recipe is genius! The applesauce gives this granola a really nice consistency. I keep the snack tubs of applesauce on hand to use in recipes like this. Because I am trying to remove sugar from my diet, I used 1 packet of stevia instead of the brown sugar, and it was sweet enough for me with the applesauce and honey. This has all my favorite..."

    Reviewed Oatmeal Muffins

"This was a heavy, dense, filling muffin. I used Kashi Go Lean cereal instead of Fiber One, light olive oil, soy milk, and leftover pie filling instead of Jelly. I also doubled the recipe and got 24 muffins. I used 1/2 cup sugar and 2 pkts. stevia, and they were just the right sweeteness for us, not too sweet. Sorry I changed so much of the recip..."

    Reviewed Green Goddess Taco Salad

"I served this with a Mexican-style vegetable soup and grapes. Then I served this salad in a BIG bowl. I told DH that this is all we're having. He looked at it and said, where's the rest of the meal? Then he started eating, and after a few bites said, this is good. You can make this again. This is one of the best salads I've ever had. These a..."

Reviewed Vegan Maple Cinnamon Roasted Cashews

"Everyone liked these. I used butter and cooked the syrup on the stove in a pot. They were so easy. While cooling, I kept stirring every 5 minutes until they hardened up. They released from the tray very easily. Next time I will add dried cherries or cranberries to the bowl while serving. Thank you, MizEmerilLagasse, for posting."

Reviewed Cheese Stuffed Portobello Mushrooms With a Balsamic Glaze

"These were fabulous! I did try to lighten them up, though. I used 4 mushrooms for the same amount of cheese. I only used 2 tablespoons of olive oil, and I used teriyaki sauce instead of soy sauce. We gobbled them up with dilled cucumber spears and vegetable soup. Next time I will try adding chopped tomatoes and sauteed onions under the cheese...."

    Reviewed BBQ Sloppy Joe Bake

"We loved this recipe. I used 1 large fresh red pepper and 1 medium onion to make short strips instead of frozen peppers. I also used TVP instead of ground meat = Vegan Sloppy Joes By Shannon Holmes. I used a 7 X 11 inch casserole dish. It took 25 minutes to bake. This turned out so good. We love Manwich, and I was trying to add veggies and use..."
