    Reviewed Strawberry Strawberry Pie from THE REALLY GOOD FOOD COOK BOOK

    "Oh, this was just okay. I won;t give it stars because I probably played around with the glaze too much. I sliced the berries thickly, and put maybe 2 1/2 cups into the pie.     Reviewed Mexican Eggplant (Aubergine) Casserole

    "This is so good! I usually avoid eggplant, but this is worth the weird vegetable! It really tastes yummy! I substituted refried beans for the green chilies to add some substance- mixed about 1/3 of a can with half a can tomato sauce. (only used 1 large eggplant, and it served 2 of us.)

    About Me

    It wasn't until I got married (2004) that I discovered I love to cook! Almost all of my recipes come from Zaar now, although I will never part with my Mennonite Community Cookbook. (It remains the most informative cookbook I own, and is the style of food I grew up on.)
    I believe in eliminating unnatural additives in our diet by avoiding prepared foods whenever possible. I have made my own cream of chicken soup, barbecue sauce, mayonnaise, and more! If I had more time, maybe lived in colonial days, I would do more of that... :)
    But I also work full time in a church-based preschool teaching 3 year-olds. During the school year, lesson planning keeps me very busy.
    My mother-in-law recently moved in with us, so we're trying to work out the sharing of kitchen duties. I've got to get her to be computer-savvy, so she can cook off of Zaar, too!

    Favorite Foods

    My husband says he married a real chef and is a very good sport about me trying new recipes. But every once in awhile he will beg me for a frozen pizza... go figure! I love cooking for him, and he mostly prefers to eat healthy so I like to find tasty low-fat recipes for us.
    I on the other hand like ice cream, brownies, and ice cream with brownies...!
