"This is it...an awesome ginger cookie recipe! I can't believe I haven't reviewed it yet because I do love them so. Even my hus, who is not a ginger fan, loves this cookie. Do not skimp on the spices (even though it seems like a lot, they all work beautifully together. Just today I successfully used margarine in place of butter with great succ..."

I did let the dough rest on the counter rolled out for 20 minutes before cutting, but used them promptly in my soup following that (no drying time and they were dynamite. I mig..."

"Yum! Yum! I served these for "Meatless Monday" and they were a hit! Even my decidedly grumpy-about-meatless-Monday husband loved them. I, too, lowered the butter a little. I can see some great variations in the future...jalapenos, beans, spices - the avenues seem endless. Thanks so much for sharing!"

"This really is an easy recipe - the mixture thickens up in about 10 minutes - stir constantly, or you may get some scrambled eggs on the edges. I added butter in small pieces and it incorporated nicely. I would suggest covering with plastic wrap if not using immediately."
