I've been cooking for 5 years professionally but 23 unprofessionally. My family moments that most stand out to me are the ones with the best tasting food. I had a necessity to learn to prepare food at a young age helping my blind grandmother making things. Get me this, get me that. Stir it. How does it look? How does it smell? I was following what I was told never really understanding why it worked the way it did.
I grew up doing other things. Not cooking. And I reached a rut in my life. I think I was watching a lot of Food Network and I started cooking different things for my family. I guess everything tasted really good because my mom told me I should join her local union apprenticeship program. After some trivial questions about cooking and kitchen utensils I was in. Borgata, A.C. is where I landed and after 2 years I was promoted to cook. I have been making large volumes of sauces and foods for a VIP room. Perfecting and learning new things whenever the chance presents itself. I was getting a little lost but now I've gained new guidance that is teaching me new things and helping develop my culinary senses.
Risotto, Making different sort of flavorful jus and stocks.
