"We loved these..a really tasty recipe for what has become a boring vegetable in our house! "I too found this recipe quite dry, and I was looking for a more "cakey" muffin. They taste good but have a crispier crust than I wanted. I made half of the quantity since I only needed 6 muffins, and the mix actually made 8 Jumbo sized cakes.I am still seeking my perfect muffin."
