"This was really easy and delicious. The meat was tender and so flavorful. I grilled the chicken and chopped it fine and had a taco bar with grilled corn tortillas, lime, cilantro, cheese, salsa verde and homemade guacamole. My kids and husband loved it and requested it for weekly dinner rotation."

"For anyone who is gluten free - I used gluten free lasagna noodles and this lasagna was fabulous! Because it is made from scratch everything else is naturally gluten free and so it is safe and is truly the best lasagna I have ever eaten. I served it to my entire family at a party and everyone raved. It was even better the next day. Thanks!"

"This was a huge hit tonight with my entire family. It was really easy to prepare with very little mess to clean up. The chicken turned out very moist on the inside and crunchy on the outside. Everyone agrees they want me to make this one again. It's nice to have a gluten free recipe that my family will eat. Excellent!"

"This was so easy to make, easy to clean up, and delicious. I made butter noodles for the kids and husband and I had it with rice since I am allergic to gluten. It went well will both side dishes. I asked the kids if they would like me to make it again and they screamed "yes!" It is often hard to find something that the adults and kids equally ..."

I didn't have rice flour so I used Bob's Red Mill All Purpose Gluten Free Baking Flour instead. I made the soup ahead of time and had it on hand when I put my casserole together. "This was delicious, easy to prepare, and easy to clean up. I loved that it could all be done in one pot. The chicken was tender and the rice was so tasty and spiced just right. I can't wait to eat the leftovers tomorrow and my not-so-adventurous husband loved it as well. I sliced fresh cucumber as our veggie and the two went really well togeth..."
