"Really good! Great texture and very similar "mouth feel" to real waffles. Definately have to spray the waffle iron well with non-stick. "This was delicious! I only had the small scallops on hand this time but next time I will use the big ones. I was glad I had about 3 1/2 lbs. because the small ones shrink so much. This did produce a lot of liquid, which actually helped because I served it over pasta. My husband ate a huge amount for dinner and the the rest as a snack late at night..."

"I really liked this! The eggplant wasn't as crispy as I expected but maybe it was user error. I was pleased with the taste though. My kids weren't too hot on it but my husband, who is not an eggplant fan, thought it was not bad and actually ate it. I will definately make this again!"

"These looked very good but I do have to admit I tweaked it a bit with some spices and used only half the oil and replaced it with applesauce. They were awesome! "We loved this recipe! I took another reviewers advice and added shredded chicken I had left over. I also used fat free sour cream and lowfat cheese. The recipe nutrition facts are deceiving if you just glance at them, but if you read them they say this recipe is only two servings. I fed four people on this, with leftovers! Absolutely a keeper!"
