"Yes Mary? I was waiting for you to leave some correction or something, why did you say that and then not include what you thought was not authentic? I like how detailed the recipe was and I'm making this tomorrow. Wish me a bit of the Irish. lol HAPPY PADDY'S DAY TO ALL, Jody"

    About Me

I moved to Santa Rosa for health reasons, I'm HIV , I was told this is one of the best counties to live in. It has the best opportunities where your health is concerned. They have one of the best food banks, with a large variety of choices. I am very grateful for all I receive here. I don't work, not because of the HIV, but because of some old injuries. I'm on SSI, so even tho I have a lot of time to cook, I am on a limited income, no money for wild ingredients. So it's good  I like to bake and cook alot of deserts, since I'm kept in supply with all my staples, I'm single so cooking a whole meal is harder to do. I'm just starting to plan meals out. That works out pretty well, where I'll make a big batch up so i can freeze the rest. I love to garden, it's my meditation time, a time to relax. I love my dog, I even get in the kitchen for her, making doggie treats, etc.

    Favorite Foods

I can't eat some of my fav's because they are too crunchy, too gooey, too hard. My bite is just not the same. I've always been partial to deserts, so boy am I in luck, I can at most of those. My neighbor introduced me to what she called the dream bar, it goes like this in layers, chocolate cookie, butterscotch chipc, chocolate chips, flaked coconut, walnuts(optional), drizzle the top last layer with sweetened condensed milk. It is really addicting. I love making cuz I love to eat, Chicken Enchilaldas. I love flour tortillas to start pull chicken, then mix with sauteed onions. First spread some enchilada sauce in pan, on tortillas, then thin layer refried beans, chix, cheese, top with more sause. After rolled up spread sauce over the rolls, cheese then sprinkle with black olives. Serve with dollops of sour cream and guacamole. yum:)my
