    "Just a note: to cut the broth down lightly mash some of the beans. Also the flavor in the red beans comes mainly from your sausage - if you want good flavor, make sure you have some good Cajun sausage (just b/c it's cajun doesn't mean it's hot)! You can even add a little more to the pot if you want (in Acadiana we call that "Lagniappe".) If you can..."

    About Me

    Happily married mother of two wonderful, beautiful children who love to try new foods - my husband . . . not so much, lol! He is Cajun and a pretty picky eater - but I am still determined to get him eating healthier (even after 7 years!) He did not marry me for my cooking skills, but I must say that I have come a very long way!!! I am soooo glad I found this website because I actually look forward cooking new things and I am learning to "throw things together" which I would have never done before because I honestly did not know what would work together!

    Favorite Foods

    I make killer mashed potatoes! And i have found that I can make pies. I started making pies because my husbands family is HUGE and have big holiday gatherings where everyone brings something.  Well, no one ever brought pies, so I started with the uber easy pumpkin pie (straight from the Libby's label) and have been making pies ever since - my pecan pie is requested at every family gathering, I am very proud to admit!
