    I am passionate about good food, Loved working 20 yrs in the Catering business and learning from many awesome chef’s but chose to have cooking as only a loved hobby for me… I didn't want it to become a job...     Life is fleeting, learning to cook great food with love, breaking bread with a friend, and celebrating life with food and drink is the way forward to spice up a happy life filled with good memories, wonderful health happy children and grandchildren! A good cook has a warm fragrant kitchen, people gather around the table sharing the little things, laughing, crying sometimes, playing, and praying, but together loving…My door is always open and there is always room for one more at the table! When it’s my time to go, my last supper would be to have those I love around my table… We must eat to live, God gave us so many amazing things to eat on Earth, let’s share what we discover … I start with my NM Green Chile Chicken Enchilada Casserole… from my heart to yours!

    As my first recipe to share with you, I have posted my own version of  Green Chile Chicken Enchilada Casserole.. Everyone begs me to make this. As a native New Mexican I love our Hatch Green Chile home grown in NM.  In the fall around State Fair time you can smell it being roasted all over the state. It is unique to NM and there is nothing better in the world...And to answer the NM State qestion: "Red or Green?" you'll want to cook up a bathc of my NM Red Chile Chicken Enchilada Casserole .The Red Chile used in NM cooking is a ripened Green Chile, The flavor is sublime and sometimes hotter than the green. The preparation for this dish is the same as with Green Chile, but you are making a red enchilada sauce.

    These dishes offer the heart of NM food it is delicious, inexpensive, expedient as you can use leftovers, or fresh, and layer the sauce, corn tortillas, and cheese as you would lasagna. Garnish with Chopped Roma Tomatoes lettuce and raw onion, and sour cream if you like that too.  Many people use Cream of mushroom or Chicken soup for this, even some New Mexicans, but I think the chicken stock is a vast improvment and these recipes are my own.
