    About Me

    UPDATE: Due to Hurricanes Charley, Frances, and Ivan, the Terrible Three, I have lost my home and most of our belongings. Most of my area has been destoyed and many people have lost even more than I. While I count my blessings I brought our photo albums, important papers, and valuables, I realize I also have what is most important to me, even if I hadn't saved some of our memorabilia. I hope all of you who read this take the time to think of all you hold dear and remember to cherish them always. I would also like to take this chance to thank every member of FEMA who are away from their own families and who travel all over the country to help those like me in our time of need, the people of the Red Cross and Salvation Armies, and those volunteers and anonymous donors who helped out. Warm wishes and heartfelt blessings to all. Blessed be.

    I'm a stay-at-home mom of two adorable children. My DD is 2 years old and my DS is 11 months. My DH and I love spicy food since he is Cuban and I am Italian. We live on the Southwest coast of Florida, a stone's throw from the Atlantic Ocean and Gulf of Mexico. I love horseback riding, reading, writing, painting, and gardening. We have our lawn care business. Its alot of work right now but it feels nice to be on our own! And I couldn't be luckier and happier to stay home and care for my children instead of having to put them in daycare.

    Favorite Foods

    Both my DH and DD are very picky eaters and I am forever experimenting with different recipes. My DH has very specific tastes: meat, potatoes, and rice; and I love my chicken and pasta and bread. LOL We're on a tight budget, as we have started our own business. So I am always on the lookout for dishes that are inexpensive, healthy, and delicious. Recently, we have both decided to jump on the low carb/low fat bandwagon. He realized he gained 20 pounds in the 4 years we've been together and wanted to lose it. I need to lose these baby pounds from when I had my son *gasp* almost a year ago. Wow, I cant believe its been that long. His first birthday in Friday August 13 and that has really put things in perspective for us. This way of eating is going to be horrendous at first because he hates almost all veggies, so I am on the lookout for delicious meals that I can hide veggies in :) What he doesnt know wont hurt him, right? LOL I finally convinced him to try mock mashed potatoes. This man, who hates cauliflower, said, "Wow. These potatoes are great. What did you do differently?" I just looked at him, smiled, and shrugged. "Nothing different." I told him AFTER he finished his "potatoes". I dont think I have ever literally seen someone's jaw drop open in surprise the way his did that night. So for all of you out there who have significant others and children who wont eat veggies, THERE IS HOPE FOR YOU! :)
