"This was DELICIOUS! I cheated and got a container of pre-cut butternut squash, which made the prep time practically nonexistent. I also used lots of fresh rosemary, and reduced fat feta. Last night we had it as our main dish with a yummy arugula salad, and I can't wait to have the leftovers :-. SO good, and so easy. Thank you for sharing this!!"

"Fantastic! A friend of mine was nice enough to share a bunch of squash from her garden, so this casserole was the perfect answer! I had to make a few adjustments because, shockingly, I was missing some key ingredients. I used 2 cups 2% milk cheddar cheese, and would you believe I was out of milk... so I substituted... ready? One cup cottage cheese..."

"Great! This was so easy... I loved that I could walk away from this for 20-25 minutes to multi-task :- It made so much (when cooking for 1-2 that I will be able to take some for lunch and freeze some to enjoy again! I was unfortunately missing a couple ingredients (zukes & jalepeno, but the base of this recipe is good enough that one can play a..."

"FANTASTIC!!! This was sooooo good. I made this ahead of time and placed it in the refrigerator for a couple of hours until I was ready to bake it. I used part skim ricotta and subbed 1/2 cup egg whites for eggs since that's what I had on hand. It worked perfectly and my boyfriend raved about it for several days :-"

"This was fantastic. I made it last night and it was a HUGE hit in my house. The only changes I made were 1 cup oats for the cracker crumbs, and I omitted the egg. I used minced red onion b/c red was what I had on hand. Turned out great. Don't tell my mom, but this is my new favorite meatloaf recipe! :-"

"I have made your recipe before & forgot to comment on it... it's WONDERFUL!!! This time, I did a variation, using what I had on hand. Therefore it was: 1 can black beans, 1 can diced italian seasoned tomatoes, no onion, a handful fresh basil, pepper, garlic, balsamic, and then some apple cider vinegar instead of the red wine. It actually turned ou..."

"Experimented with making these last night. I did mine like AngelaTN below, and put a little olive oil, kosher salt, garlic powder and some cayenne pepper. I cooked them for 45 minutes at 350 degrees and they were wonderful! New favorite in my household :-"

"This was actually my second time making this dish and it's WONDERFUL! I didn't follow the veggies exactly either time... both times I used whatever frozen mixed veggies (broccoli, carrots, peppers, onions, etc I had on hand, and some frozen edamame. Last night I put in a bunch of fresh mushrooms also, and made a little extra sauce. Served it over..."
