    About Me

    I am a teacher who loves to cook and spend time in the kitchen. I enjoy teaching cooking, especially to kids, and often they love to help in the kitchen. And I find that boys are just as interested in it as girls are. I have been everything from a cook as a boy in a fast food place to a restaurant manager, and what I enjoyed most about being a manager was gettng along with my employees and finding time to cook in the kitchen. I especially enjoy creating soups and stews as well as sauces. But there is nothing like a good outdoor barbecue with plenty of steaks, ribs, chicken, corn on the cob, and potato salad flavored with real bacon bits, dill weed, and tarragon. And yes, top it with a light sprinkeing of paprika.

    I like cooking with fresh, natural products, not substitutes nor imitations. For example, nothing tastes like real butter. All of the margerine advertisers claim it taste like butter, and even name it to taste like real butter, but it does not. The same is true with all of these imitation and substitute foods. One of my biggest pet peeves are advertisements which make false claims. And most of them make false claims. There is nothing which compares to fresh, natural products.

    Favorite Foods

    Certainly pizza ranks high along with chile and most all Mexican foods. Chinese cusine is among the best in the world. And good old American southern and colonial cooking are to be praised too. Many of the television chefs create great dishes. Some of the best are by Julia Child, who began the entire tradition of television cook shows and who has written many cookbooks, Emeril Lagasse, Jeff Smith, Sarah Moulton, Martin Yan, and Justin Wilson, the great master of Cajun cuisine.

    I suppose what is most enjoyable to prepare is a complete Thanksgiving dinner with all the works. Along with turkey and dressing must be mashed potatoes with loads of gravy, Danish cabbage, various vegetables, and of course pumpkin pie topped with real whipped cream.
