"Very good muffin. I made these to go with Conquistador Quiche and Avocado Lime Salad for a ladies luncheon I had yesterday. Easy to mix up and nice and moist! I used my mini muffin tins and got 35 muffins. Thanks for sharing this- No more Jiffy Mix for me! This will be my go-to recipe for cornbread muffins from now on!"

"Yummy recipe!! I made this for my Mah Jong ladies luncheon yesterday and everyone said how good it was. I used 2/3 mild and 1/3 spicy Italian sausage, since I wasn't sure how "heat tolerant " these ladies are. "These were really great!! I added about 5 or 6 Italian sausage links, removed from their casings and browned, to the ricotta mixture and used The Silver Palate tomato basil sauce to top these with. I also added a little extra shredded mozzarella on top. Everyone loved them and they freeze really well too. Thanks for posting this yummy recipe!"

"With daytime temperatures of 94 and a heat index of 104, I decided last night was a perfect time to try this recipe ! "This was great! I made it last night when we had some friends over for dinner. I made the topping, minus the tomato, the day before to allow the flavors to blend and just added the tomatoes right before spreading the mixture on the baguette slices.. Delicious- we all enjoyed this! Thanks for posting this- it's a keeper!"

"This is a great basic vinaigrette! I used rice wine vinegar, but other than that, followed the recipe. I can see adding some fresh herbs to this for a different twist of flavor. Thanks for posting this- it's a keeper!"
