"A co-worker gave me a sack full of eggplant so I rushed home to find something wonderful to make with it. This was my choice and it turned out very well. It is a very thick and hearty stew. "I've never made a pizza without any meat. This one was very good and satisfied my craving for something naughty. The zucchini and onion rings looked kind of neat on top of the pizza. "My family likes muffins for breakfast but have gotten tired of the two I usually make--blueberry and banana-nut. We all thought these muffins were extremely good and very healthy also. "I know this recipe doesn't need another rave review but it is going to get one. My kids loved these easy and much healthier potato chips.
