"I would call these Winter Solstice cookies because they are deep and dark like the longest night! I substituted brown rice syrup for the brown sugar and omitted the egg and added about 1/2 cup flour. I used 1/2 spelt and 1/2 brown rice flour. Also I used coconut oil. I baked at 350 for 5 minutes. These were delicious. Thanks."

"This was a delicious, very rich pie. I made it for a vegetarian Thanksgiving party and it was devoured and enjoyed! I substituted brown rice syrup for the corn syrup. I used 2 cups of walnuts instead of 1 cup and I would cut the brown sugar in half next time, as it was a bit too sweet. Otherwise, a fabulous wholesome dessert."

"Fabulous! I made this cake for Valentine's Day for my sweetie. I cut the sugar and used 1 1/3 cup and 2/3 cup grated coconut instead. It took 55 minutes at 350."
