"This is a great week-day recipe because it is really quick and easy. But to add more flavour I think garlic +/or onion would be nice? Honey might also be nice? I have already made this a few times now and I really enjoy it!"

"This is really good!! However I added chicken and I also used more chicken stock, then added cornflour to thicken it - so it was less like a stir-fry and more like a casserole? I also zapped the pumpkin in the microwave first otherwise I don't think it would soften! BUT VERY, VERY TASTY!!"

"I have now cooked this recipe about 4 times and I LOVE it! I have used white and awase(mix of red and white) miso and both turned out really well. I find that if I put the lid on my frypan when I'm cooking the eggplant before adding the miso it draws out more of the bitterness. I also use brown sugar and serving with spring onions is a MUST for me..."

    LinMarie says:

"Wow! This was soooo tasty! I served the dressing with a potato salad using egg, onion (and a little sping onion) green, red and yellow capsicum and corn. As I made extra, the second time I ate this salad I added some unsweetened yoghurt and it was DELICIOUS! I highly recommend this! Regardless, thank-you so much for a recipe that I will use over a..."

"This was really tasty, quick and I will definately make in again! I love garlic, but I only used one clove and it was enough. I served with silken tofu and tomato wedges for a lite summer meal and it was very tasty! Tofu recommended!!!"

"SUPER tasty! I love curry so I couldn't go wrong really, but I also added eggplant and pumpkin which made for a really, really tasty meal! I cut out the hot sauce, and I made sure I washed the rice really well before adding it. I've already made it twice! Thanks a bunch!"

    LinMarie says:

"Great! Very tasty and not too salty or too overpowering. I must admit I am a fan of miso though, so perhaps if you don't like miso give it a miss, or try it with Shiro (white) miso for a milder flavour? I used Awase miso which was really tasty! I served this with a very Japanese-style salad of cabbage and tomato, with a bit of carrot, spring onion..."

"This recipe is a great summer recipe. I used rice noodles instead of soba. I did find the dressing a little bit too 'vinegar-y' so I would probably recommend more oil and less vinegar? I will definately make this one again though! Thank-you!"
