I'm a Can-Do-Ologist who loves fresh, delicious foods... but who hates spending a lot of time in the kitchen since I'm usually cooking for just me. (And I don't like leftovers.) I love experimenting with a blend of new flavors and old favorites, and I am especially fond of thai and eastern spices with tofu and veggies, and of my Mom and Grandma's "comfort food" recipes.
My favorite foods to eat include Mums' fruit-sauteed ham, Grandma's chocolate chip cookies and fruit-in-jello, Grandpa's jellies and jams and chex mix, Dad's spaghetti and chili, my brothers' grillings, and my Gram's salads and veggie dishes. Other perpetual favorites are chocolate ice box pudding, mac & cheese, tofu pad thai, broccoli & tofu in peanut sauce, apple crisp, homemade apple sauce, and mashed turnips.
And now I've made myself hungry creating that list...
My favorite foods to cook... well, there aren't many! Honestly, I don't like spending time cooking--usually. Sometimes when the mood hits me right I can lose myself in it, like it's an escape. But usually I'm under too tight a time schedule to do that, in which case I don't want to be bothered with preparation of any sort! (I end up eating a lot of pasta, oatmeal, veggies, and fruit. LOL)

Got this recipe (& modified it just ..."
