"I too used hash browns (Simply Potatoes & layered all the ingredients in an 8x8 glass pan, using 6 eggs. I just shoveled it in the over for about 35 min. Very good & since there's just the 2 of us - we have the added bonus of leftovers. I did add a sprinkle of garlic powder too."

"Just made these & loved them. The sweetness of the scallop shines thru in this recipe. I did add a touch of butter - 1 tsp., if that, to the oil. I considered my scallops to be medium sized - wish they had been larger. Will make again w/large ones. Cooked 3 min. on each side. Thanks!"

"This recipe doesn't need another 5 star rating but I have to give it one. This was really good. I must say that I was "not too brave" when it came to adding 3 jalapenos - so I only used one - big mistake. It had a great texture - not sticky or mushy - perfect. It does make a ton of rice. "We love mushrooms in this house. Served these w/grilled ribeyes, baked potatoes & a lovely salad. Very good. I love to top my baked potato w/mushrooms as well.
