Germany
Musica laetitiae comes, medicina dolorum.
After finding out that I'm gluten intolerant in summer 2007, I went searching the web for gluten free cooking and baking ideas, which thankfully led me to Zaar!
I was born and raised in the Black Forest by a Romanian dad and a northern German mother who spent many years in Italy and thus felt more Italian than German. So I grew up quite Mediterranean / South-East-European and never got in touch with typical German cooking. Now that I'm transplanted to the North-West of Germany close to the Dutch border and have a very German MIL, I learned some typical German dishes which I liked and which I did or will post.
As my maternal grandfather used to be a confectioner, I seem to have inherited some of his genes - I'm not really fond of sweets but love making them, no matter whether it's cake or cookies or other kinds of sweet things.
What I found on German gluten free websites was not what really thrilled me - too much starch, too much sugar or whole grain stuff which tasted - well, healthy... but... you get the point.
The broad variety and creativity of cuisines provided here on zaar is what I was looking for. Using zaar made me far more creative myself - thanks to all you wonderful guys round here for all your ideas and all your kindness and support!
Although I got sick by eating most of my life, I always loved to cook and bake. Now that I know what I have to avoid, I can eat without getting sick, and I simply love eating!
Since spring 2011 I'm co-host of the Diabetic Cooking Forum:

Mostly Mediterranean and North African / Middle Eastern food, also I love Indian and Korean food. Despite all German prejudices I love British cooking, too!!!
Due to gluten intolerance, casein, soy and histamine intolerance, my choice of foods is limited. That means I have to adjust most recipes more or less to my requirements. So my ratings often display the judgements of my guinea pigs, not my own because I had to change too much. Also usually I won't give less than three stars because mostly I can eyeball if a recipe will work or not and will only make those which I'm sure will work. In case I'm wrong and something really doesn't work out at all, I might give less than three stars or no stars at all and just comment the recipe.
