I am from the U.S. Virgin Islands but currently live and work in Atlanta, Georgia. I work for a major airline in customer service.
I love cooking for my friends and family and fantasize about being TV Food Show Host. My favorite food is understandbly Caribbean and have a fondness for Asian fare. My Parents were from the Cape Verde Islands which are a group of islands off the west coast of Africa. They were once a colony of Portugal so I have both in my gene bank. I am a professional jazz vocalist but love all types of music. I love to entertain and am famous for my West Indian dishes. My husband had a kidney transplant a few years ago and as a result of the many medications he has diabetes so I have learned to adjust my recipes to ones that keep him healthy and happy. My friends call me the "Jazzy singing kitchen diva."
My favorite dish to cook is Oxtails.. or anything that I can combine with jasmine rice.. I have become fond of Mexican food since I have been living in Atlanta. I also have a liking to Asian fare. My favorite restaurant is a little Island spot called "The Lime Inn" in Cruz Bay, St. John. Virgin Islands. The food there is exceptional. I am famous for making a dish called "Cachupa" which is a stew from the Cape Verde Islands. It's a dish that is made in a large quanity and not made often but you have to share and freeze the rest.. OMG it is so good. I brings me back to my youth and roots.. I will post the recipe one of these days..
