    About Me

    I 'm married with 2 teenagers and a 2nd grader, and I'm returning to nursing school. I love to cook when I don't HAVE to, but hate to cook when I do. My focus is on preparing low fat meals that are quick, easy, and tasty enough to satisfy 5 different appetites. The kids & DH love simplicity, like steak & baked potatoes, roast chicken & stuffing; but I try to mix it up and keep it healthy without knocking myself out. It's not always a winning battle!

    Favorite Foods

    My passion is baking! Whenever I bring out dessert my family calls me "Nancy Stewart" (aka Martha). I'm known for my cream puffs, Bailey's cheesecake, fancy cupcakes, and french crepes. But I've noticed lately that whenever I bake, my pants start to shrink... So lately I've tried to lay off the breads, cakes, pastries, muffins, pancakes, etc. To replace these carbs, I enjoy whole wheat pita, rice cakes with peanut butter, brown rice, potatoes and popcorn. It's not so bad :/ I've recently lost 10 lbs. with weight watchers, so I'm trying to maintain it.
