"i made it TWICE today..oh my...it has this beautiful soft yet spongy texture and i made in this way..using a BLENDER..dumped in the oil and one cup of coarse sugar and 3/4 cup of fine sugar, chunks of carrots, then everything dry by hand...thanks kym...simple yet delicious..."

"this was super duper simple and yet so wonderfully delicious....i can make this everyday...and i made it without using the mixer...i merely used the ladle and it worked really well...quite superb texture...i even added in some grinded peanuts to add some crunchy flavor....soooo easy....will be a keeper in my kitchen..."

"it was moist as what the others said, i didnt change the number of cups of sugar, but i add in 3 more eggs.it was an ok cake, thought it would take more pumpkin than chocolate. anyway, thanks, the cake turned out orangey and was easy to make. will make some improvements next time!"
