"5 Ingredient Fix Contest Entry
I have an 8 year old son with Asperger Syndrome. Eating any fruits or veggies is nearly unheard of for him. I have become very clever sneaking in items undetected by his sensitive palate. The potatoes add amazing texture to these fritters. He eats them like donuts, and I don't feel so guilty. I used Martha White bran..."

"I entered 3 recipes. One was accepted immediately. 2 others were sent back as not published. I attempted to resubmit with the corrections, but they were not published yet. My question is do I wait, resubmit, or are they a lost cause since you can only enter 3? Thanks!"

"Fantastic. I have a terrible time getting my son to eat veggies. He gobbles these up and has no clue it contains potatoes."

I love getting back to basics. I grew up, and still reside, in the Southern Mountains of West Virginia.
My family did not have much at all growing up. My Mom is a very resourceful woman. She always managed to put food on the table from nothing! Most of my memories are with her in the kitchen. I made a German Chocolate cake for my 6th birthday, with Mom's help. After that I was hooked!
Later, she divorced, and as a single Mom had no choice except to work outside the home, which meant I was often the person preparing our family meals. I made my first Thanksgiving dinner at 10 years of age.
Now, I am married, with my own family. I enjoy making sure my home is centered around our table.
I work full time as a Nurse and always, like my own Mom, make sure to give all to my family. I believe food not only nourishes our bodies, but feeds our souls.
I love traditional Southern foods. I love biscuits and gravy, beans and cornbread and anything with bacon fat. I also love trying new foods. I will try any food once!

"5-Ingredient Fix Contest Entry. As a busy Mom, the slow cooker is my friend! This recipe will allow a Sunday dinner any night of the week. Be sure not to over fill the center, or it will separate, exposing your mashed potatoes. The beef will shrink slightly in the slow cooker. The best way to easily remove your meat loaf in one piece is to use a sl..."
