I live with my husband, two sons (3 1/2 & 1 1/2), and daughter (2 weeks) on Long Island. I have been a vegeterian for 15 years. My husband and sons eat meat but do enjoy vegeterian cooking as well. I usually cook vegeterian meals for the whole family once or twice a week. The other days, I try to pick recipes that I can easily make vegeterian by leaving out the meat or replacing it with tofu or beans. This way I can make one meal each night with a small portion in the vegeterian version for myself. My family thinks it's funny that I am able to cook meat dishes without ever tasting them. Somehow I can imagine how the ingredients will mix together to make the dish taste. When I am not being a mommy and wife, I am a special education teacher for students with Autism Spectrum Disorders. I love cooking at home with my family and cooking with my student at school!
I really like all kinds of foods that are vegeterian. I tend to enjoy ethnic foods with a bit of spice like Indian and Thai. If I had it my way, I would have lots of little samples of food instead of one big meal
