"I loved the way the crunch of the green beans and the crunch of the water chestnuts complemented each other. My only changes were to add a grated garlic clove, to use about 6 leaves of fresh Basil, and to use only a sprinkling of parmesan.This recipe is definitely a keeper!"

"When I made this tonight from the cookbook, I added parsley just like CookbookCarrie did, but I also added 1/2 tsp. dried basil to the ricotta cheese mixture. This is one of those dishes that I'm sure will make it into my regular rotation of meals even after the diet. I could eat the tomato and cheese sauce all by itself."
