Reviewed Healthy Wheat Bran & Flax Meal Muffins

     |  By Chef #508256

"These were yummy! I used a scant 1/2 teaspoon of liquid stevia for the sweetener and apple cider vinegar for the lemon juice. Wonderful hearty flavor. The texture was a little coarser, but then they ARE bran, and I think bran muffins are maybe supposed to be. I think I'll add a little canola or walnut oil next time to make them a touch lighter..."

"Wow, this was great! I made a few substitutions: onions for shallot, omitted the oregano, corn, black beans, and cotila cheese (didn't have, and subbed cumin instead. Delicious. Even the kids loved this; my 7-year-old asked me to make it for dinner every night this week. : Next time I'll double the recipe and add in the black beans and corn..."

"We really love this recipe. I've been making it for years; I'm not sure how I overlooked reviewing it! My kids--even the three-year-old--like it, and it's easy to adapt to make in advance, too. To make it in the crockpot, I don't dredge the chicken in flour (too soggy if you do and add the fresh parsley at the end so it will retain a fresh col..."

"This is my new pumpkin bread recipe; it's just fantastic! It's spiced perfectly--not overpowering at all. Wonderfully moist and not heavy like some pumpkin breads. I substituted applesauce for half of the oil to save a few calories and you couldn't tell. I added a cup of chopped walnuts. I'm going to be making more loaves to give away."

"This is so, so good. And so easy! I steamed some broccoli and made some microwave "baked" potatoes while I cooked the steak, and had a really impressive steak dinner on the table in 20 minutes. Now THAT'S a lifesaver on weeknights. The sauce really makes this special. The only change I made was to deglaze the pan with a little red wine and su..."

"Great, easy solution for leftover turkey, which, I have to admit, my family usually finds distasteful. They like this, though; even the kids gobbled it up with no complaints. Easy to throw together. Add a bag of frozen peas and you're done."

"These were quite good, especially considering that they're fat free. My husband thought they were good, but not as moist or rich as the ones I usually make with melted butter. Even with a slightly drier texture, though, they have a great flavor and we'll have these again since we're trying to eat healthier."

"This was super simple and just plain good. I'm not a fan of tilapia normally and wanted something to dress it up. This mustard/mayo coating did the trick. And my toddlers had seconds! I used breadcrumbs and dried parsley. I threw in some dried dill, too. The pan-frying seemed like too much trouble, so I baked mine in a 400-degree oven for..."

"This was so easy to do! A few minutes prep the night before and we woke up to a hot breakfast. We like ours sweeter so added more brown sugar after serving. I halved the recipe to serve 2 adults and 2 toddlers, and I added raisins. I'm going to be making this a lot now with different fruit. I love being able to have hot oatmeal all ready to g..."

"Really simple but SUPERB! I've made these twice; once on a charcoal grill and once on the George Foreman contact grill. They were great both times. The second time I just poured the olive oil and herbs into the same freezer bag that I defrosted the chops in to season them. Easier and less messy. We had these with roasted potato chunks with fr..."
