Reviewed Spanish Chicken & Rice Bake

"Holy cow! This is a favourite in our house - an absolute favourite! I've made some small substitutions to make it fit into my diet, but this is fantastic!
I cube the chicken and mix it in with the rice, as it takes on the flavour even better. Instead of adding salsa, I add original Rotel, and I omit the beans and corn in favour of chopped up pe..."

"I have made this dish many times, now, it's a staple in our house when we want something extra nice! I add a little spice as well, and a tiny bit of brown sugar to offset it and it's lovely!

One thing that I do to save time (and dishes) is, when the ground beef and everything is cooking in my frying pan, I steam the peppers by inverting th..."

    About Me

I am a graphic designer who dabbles in cooking. As I am now the lady of my house, I've been experimenting with different recipes, trying to cater to my family's needs. I like fairly simple recipes with good results.

    Favorite Foods

My favourite dishes are szechuan dishes, long green beans, szechuan chicken, and I am looking for a good recipe for mongolian beef, or szechuan beef - a dish where the beef is slightly battered and offers an incredibly sweet/spicy flavour.
My favourite restaurants include Dragon Court, a restaurant that serves the most amazing Szechuan foods locally, Mongolian Grill and Pho Thai Viet Cuisine, a little restaurant that offers the most amazing Pad Thai and spring rolls.
I am famous in my family for my cabbage rolls, as I created the recipe based on many others and have yet to find one that offers as nice of flavour as the ones that I make :)
