Shared Recipe Cabbage Rolls Filled With Bread Stuffing

"Take advantage of those holiday leftovers with this delicious stuffed cabbage recipe. This is so good, you may decide to make it part of your regular menu!"

Shared Recipe Low-Cal Series: 10 Minute Fajitas

"Delicious Mexican Fajitas made with all the right ingredients. Low enough in calories you can have two for dinner! (Though just one with a salad is quite satisfying.) I'm calling these 10 minute Fajitas because you prepare the other ingredients while the chicken is cooking...about 10 minutes, depending upon your skill with a knife."

Shared Recipe Low-Cal Series: New Orleans' Style Seafood Gumbo

"This delicious Low-Cal New Orlean's style Seafood Gumbo comes in right at about 250 calories per serving. I'm not positive exactly how many fat grams in total, however, the fat content is also pretty low for a gumbo. Make sure to have plenty of your favorite hot sauce on hand to really spice it up!"

Shared Recipe No Fail Macaroni & Cheese

"This recipe uses cream of mushroom soup to help maintain its creaminess, so now anyone can take mac & cheese to a pot luck dinner without worrying about it coagulating into a lumpy, unappealing mess. You cannot taste the mushroom at all--and, when I reveal it is in there everyone is always surprised."

    Shared Recipe Garbanzo Bratwurst Soup

"This is a bit of a twist on my Spanish Garbanzo Gumbo recipe. The flavors from the bratwurst and the chipotles in adobo really make this soup unbelievably delicious!

I find the Brauts give the soup a much better flavor if grilled. My second choice would to be to bake them whole and then chop them up into cubes."

"This is a fun and tasty recipe for a quick, spicy salsa with a punch. Adults only, please!"

Shared Recipe Pork Chorizo Sausage Mix

"I love the flavors in this recipe. I use this as a ground meat and do not put the mixture into casings and allow to dry however, if you wanted to do so, you certainly can use this recipe for that purpose. There are many uses for this, such as in rice, in soups and stews, as a patty it is delicious on a biscuit or a piece of cuban bread, as a fill..."

    About Me

I am a web developer by trade, but a cook at heart.  I simply love food and can be inspired by just about anything to create a new dish.

(12/14/11) - My enjoyment of my own cooking has caught up with me, so effective immediately my household is on a diet.  A diet, at Christmastime?!  Yes, I am afraid so.

But, I am a believer that a diet should not mean your food can't taste good, so, I will be experiementing with alternatives to reduce the calories in our long time favorites and will hopefully come up with some new delicious, healthy recipes, over the next few weeks, which will delight even the most discriminating diner.

    Favorite Foods

My favorite meals are comfort foods such as soups, stews and gumbos and these are the dishes everyone I know seems to enjoy the most.  If I am famous for anything it would be these dishes... and my home made salsa.

I love latin foods and down home southern cooking, which, I guess may be a strange combination but I somehow seem to pull it off.

I don't really enjoy dining out very often.  Typically when I go to a restaurant with friends they always say "oh, yours taste so much better", so I guess my favorite restaurant and theirs is my own kitchen.
