    My Journal

Reviewed Fish Tacos and Cilantro Coleslaw, 20 Minutes Max

"We enjoyed this recipe very much! I was in an extreme rush and needed it in less than 20 so I cut a couple corners: I used canned salmon (drained and then flaked), skipped the warming process, and used dried herbs. It was perfect and even easier than originally planned! I am excited at the simplicity of this recipe - I have already rolled a couple ..."

Reviewed Spinach, Tomato and Feta Quiche

"This is hands-down one of our favorite recipes. I've been making it for over a year now and although I seldom cook a single recipe twice this one we have enjoyed over and over again! The only changes I have made over time is to add more feta, more spinach, and more tomatoes :) Extremely delicious - the best quiche I've ever eaten!"

    Reviewed Couscous Royale

"This dish was a treat! Instead of butternut squash I used pumpkin, and I am so glad I did! The pumpkin really stole the show :) The combination of veggies provided just enough flavor to be able to pair it with plain couscous - which is a feat in itself. Wonderful recipe!"

    About Me

In An American in Paris starring Gene Kelly and Leslie Caron, Gene Kelly’s character quite convincingly describes his love interest, Leslie Caron. Leslie dances away in a beautiful portrayal of a multifaceted, everyday sorta girl. Like Leslie Caron, I wear numerous hats. Some look better on me than others, but it’s still fun to try them all on! I live incessantly and I am wild, simple and beautiful, spiritual, exciting, lusty, sweet & shy, old fashioned, infectious & modern, yacky and moody. A little bit of everything all rolled into one.

It can be difficult to sum up 25 years in a short biography. But it is interesting to look back and mull over the trials and tribulations I have gone through, the extent of how I have changed, the friends I have lost and the companions I have gained… I certainly never expected to wish I could be 12 again, or better yet, wish I had listened to my parents when they said things like ‘save your money’ or ‘do as I say, not as I do’. Because of this I try to live everyday knowing ‘I’m going to miss this’. Not remembering the past or worrying about the future but being present in the moment.

In May of 2008 my husband (and high school sweetheart) and I adopted our puppy Kaya, and in August 2008 we gave birth to our first child. My definitions of love and happiness considerably changed the moment I first saw my son. The first few minutes of his brand new life created a new significance to ‘love at first sight’. I now know how it really feels to love somebody.

I like to think that I can roll with the punches and blend in where needed. I route for Michigan football year after year (not the most exciting thing to mention right now), I’ve been known to kick some butt on Halo 3, I fired my first shotgun when I was 8 months pregnant and I get excited when I see snakes (but I freak out when I see roaches). Among the more boring traits, I enjoy reading anything from Harry Potter (yea, I know) to John Grisham. I should be a sales rep for Netflix, I’m their #1 fan. Oh, who started the rumor 'the way to a man’s heart is through his stomach' - I beg to differ! I am in no way a man, and I'd prefer a nice meal over flowers any day! I am terribly allergic to cats… and I prefer dogs over diamonds too.

I am a stay-at-home-mom and presently I am attending college courses online: I will be graduating with an Associates Degree in Communications in July 2010. I love to write and look forward to making a career of it. I am also intrigued with the process of holistic living; perhaps a career within the realm of holistic health and nutrition would be a suitable addition to my studies :D

    Favorite Foods

The strangest thing happened upon giving birth to my son: the foods I use to despise I finally became friendly with. I suppose there is something about motherhood that completely changes a person ;) The other weird thing that subsequently occurred was my newly acquired allergy to pineapple. Weird.

Anyhow, my favorite foods would create a list too extensive and boring. Though I must say, I do LOVE a good turkey burger.

My NON-favorite foods are far and few in-between, so I will grace you with that list instead:

Brussels Sprouts taste like metal to me. Ick!

Well... hmmm... I can't seem to pin point any others. To be continued......

My cooking bible is 'The Complete Guide to Country Cooking' - if you don't own it already, I command you to get it!.....NOW!
