"I love creamy carrot soups and this was no exception. I added coriander, which is my personal favorite spice with carrots, 2% Lactaid milk since that was all I had, and I used my absolute fave veggie stock so I didn't need the onions. Beautiful result but not enough for freezing and reheating. Doubling next time."

"I fell in love with this the first time I tried it. Great for days with amazing flavor. I made some substitutions to make for less dairy (margarine for butter, soy yogurt and didn't add currants, red onion, or almonds until immediately before eating. LOVE!"
