Loving wife of almost 2 years, living with PCOS, controlling my blood sugar by low-carbing (again) since November 09. *update* I won the weight-loss competition at work thanks to sticking strictly to the Mediterranean Low-Carb lifestyle! (plus a little exercise--and I mean only a little) I'm loving the low-carb... as long as I stick to the dietary restrictions, and exercise a little, the pounds just melt off!
Since most pre-made and convenience foods are high in refined carbohydrates, I've taken to cooking my own meals and snacks. I'm still relatively new to cooking and baking, and I never had home-ec in school, so I'm mostly just learning as I go, but also doing a lot of research. I especially appreciate the tips in the comments.
I hope to gain enough knowledge and experience to soon be able to substitute healthier ingredients in any recipe and have it come out like I want, thus broadening my range of delicious food options.
