Shared Recipe Taco Casserole (Mexican Lasagna)

"Delicious tex mex flavors without the mess of making burritos, tacos, or cooking lasagna noodles. It is also very hearty - one recipe lasts for three meals with my family of three. I can't eat a lot of tomatoes so I don't add many to the recipe - you could certainly use a second jar of salsa if you like.

Shared Recipe Honey Mustard Custard Sauce

"A light, savory custard sauce for "fish fingers and custard." I used French's honey dijon mustard, but you could obviously use another brand. This would also be a lovely sauce for chicken."

    Reviewed Mexican Rice

"I love America's test kitchen. This recipe was delicious! I was surprised at how much it made, eight people only ate half of it. But I like having the extra to put away since it is so delicious, and it was a bit more work than other rice recipes. (It was well worth the extra effort!)
I made this recipe again, and used banana peppers and deh..."

    Reviewed Fresh Tomato Spaghetti Sauce

"This turned out great, and thickened on its own, although it was hard to let it simmer that long. I added meatballs during the last 20 minutes of simmering, but the sauce was hearty enough alone that it would have been fine without them :-)"

Reviewed Taisi Moa (Samoan Chicken Baked in Banana Leaves)

"The chicken was amazing! I have never tried plantains before, and they were really dry and bland so we all picked them out. I had 2 banana leaves, and it wasn't enough to wrap four packets, so I used my 13x9 glass baking dish, and put one leaf on the bottom, then added the chicken and veggies, and then covered it with the other leaf, and then tin..."

    About Me

My username used to be Japan Bound.  I picked it way too late one night, and six years later realized that I could change it into something that makes more sense.  Go figure.

I love to try new things - every other month I like to invite family over and try a new type of food. Its been fun cooking our way around the world!

I love to read, although I don't have the time to read as often as I'd like to.  I love making things.

    Favorite Foods

I like almost anything with sugar and butter, or with yogurt... I love to try new things! I don't like chicken very much. My husband eats anything, and douses it all with hot sauce. My son eats all the time!

In 2009 I figured out that MSG and other free glutatmates disagree with me, so I have been trying to cut them out of my diet.  Not too fun, since tomatoes, mushrooms, and parmesean cheese are amoung my favorites!

I also have PCOS so need to cut out sugars and carbs.  It is very interesting trying to find variety and stick with the foods that I should be eating.
