"This was yummy and so easy to make which wins it points in my book. The flavor is good and even my non-veg. hubby & our 14-month old daughter enjoyed it and asked for more. We'll definitely make it again, it's a good weeknight meal when you don't feel like a big elaborate production. Thanks for sharing!"

I live and work in Western Long Island, not too far from NYC. My husband & I moved here in the summer of 2007. We are both pastors, which is fun & interesting & rewarding. It's a wonderful thing when you get to do something you love & something that makes a difference in the world.
We recently adopted Kosar, a black lab mix puppy from a local animal shelter. We are loving being here and having a new member in our family.
I'm a semi-vegetarian, what my husband calls a "fish-etarian", although I don't eat fish all that often really. Just opens up the options when I eat at a friend's or go out. Within those limits, I enjoy all kinds of food and like trying new things.
I am a decent cook (I can follow a recipe, or do some basic stuff w/o one), and a decent baker. What I am most known for in my family is my peanut butter fudge, which is always requested around Christmas when we all get together.
