"These are great! I cooked them in a large frypan with a lid and drop the meatballs in after I get the sauce simmering. The meatballs stay intact better this way. My kids love these.UPDATE: Fixed these again tonight and was inspired to add in a teaspoon or so of "Emeril's Essence". Very tasty."

"Fairly easy to put together. I used sweet potatoes rather than white potatoes and skipped the green onions at the end. I added about 1/4 tsp of crushed red peppers and a pinch of salt and maybe doubled the water mentioned as it evaporates quite a bit as the carrots/potatoes cook. We all loved it served with brown rice. Wonderful yellow curry. ..."

"This was awesome! I did change the recipe slightly--rather than use ice cubes I used frozen strawberries, staying with 1 cup strawberries to 1 cup unsweetened grapefruit juice. I also substituted 1 packet of Splenda for the sugar. What a wonderful pairing grapefruit juice and strawberries make! Highly recommended."
