New Topic Fresh vs Frozen spinach in Cooking Q & A
"HELP! Can I substitute fresh spinach (or baby spinach) for frozen spinach in a recipe like White Cheese Chicken Lasagna ? If I can, do I need to do anything to the fresh spinach first, like soak it or steam it or anything??? Thanks so much for any suggestions!"

I'm a RETIRED high school educator (administrator). I loved my job, the teenagers and teachers, but I am really enjoying my family now. My husband is a patient taste tester for me (poor baby) and I am lucky he is not a picky eater! We have an awesome son who is back in St. Louis after finishing his Masters degree in Chicago (the next Bill Gates!) He just got married in Oct. 2008 and we have a great new daughter-in-law!! I love collecting cookbooks (drives my husband crazy) and also salt & pepper shakers (thanks to a Recipezaar swap!).
Recipezaar has been a fantastic site for me. I have learned a ton at this site and really enjoy all of the forums (I think I'm getting addicted to the Swaps!!) My next big challenge is to learn how to put photographs on of the dishes I am making. Suggestions are definitely invited!!
I enjoy cooking pretty much any kind of food but my favorite is mexican. Though I don't eat much of it, I also love to make desserts. I have spent the last 5 years perfecting my homemade salsa for canning for the winter months (all ingredients from my garden!).
