    About Me

I spent 20 years in the US Navy, four of them in Italy. It was there I developed a passion for Italian food (and gained 30 pounds). All the recipes I make, I have to admit, I never measure ANYTHING. I just pour stuff in until it looks right. I have a few favorite recipes (one of which is my lasagne) and rarely use a cookbook anymore.

    Favorite Foods

I grew up in Appalachia and do all the country type cooking - beans & cornbread, biscuits, fried potatoes, fresh green beans. (My nieces call it poor peoples food)
My very most favorite recipes I make are Lasagne, Chicken Enchiladas and Spaghetti and Meatballs. The greatest compliment I ever received was having an Italian chef say my meatballs tasted like the ones his mother made and he could eat a dozen of them. I was THRILLED.
I guess the dish that gets the most compliments is the Lasagne. It is a really big deal when I decide to make it... Which isn't very often, since I rarely cook anything anymore. :-)
