    "Loved this! I added 2 cups of chickpeas and used Swiss chard instead of spinach, as my garden is over-run with it. Absolutely delicious and a definite "keeper" recipe... even my step-daughter loved it. I just used red Thai curry, not the panang."

    If I'm not in the kitchen, I'll be in the sewing room, cross-stitching, sewing, knitting and quilting.

    I proudly serve as a full-time member of the Canadian Armed Forces.

    Favorite Foods

    Baking is a form of therapy for me- expect cookies and muffins when I'm stressed, though I've learned to avoid making pies as therapy... few people appreciate a severely overworked crust.

    As for cooking, the more exotic the better. I love Thai, Indian, Mexican and Japanese, for starters. I also like to eat healthy and am always on the prowl for ways to cut fat out of recipes using creative substitutions.
