    About Me

    I used to run the local speech tutoring lab in the University and then at the community college and I have also taught students public speaking for years, but then the bureaucracy and the state budget caused cut hours and cut classes, so now I teach a class here and there when there's a chance, and I'm looking into other opportunities since it's just not a good time to be a college professor at this point in history.

    My 3 children are grown, but they still live with us, and now that they are in their college years, we get along much better.... I guess it may be true what they say about parents seeming smarter as the kids grow older.... maybe I am getting smart. My husband keeps our family business running, and I try to let him run it "his way," so that leaves me a lot of time to experiment with my favorite hobby - cooking.  

    I love to try new recipes, and this would be even more fun if my family loved to try eating new foods... my husband has the most basic tastes, and our sons follow him and can barely get themselves to eat those green things, what do they call them, um, vegetables. They swear that hamburgers ARE vegetables (hold the lettuce, onion and tomato, pleeeease...) ha ha. I'm the only one in the family who loves fish and seafood, all kinds of vegetables and fruit - everyone else is "take-out pepperoni pizza, hamburgers, hot dogs, fries, and fried chicken."  

    I used to be a "Food Network" addict, but their programming has been getting weaker and I have enjoyed watching Cooking Channel when I can get it, and amazingly, the Travel Channel actually has some fun "foodie" shows too.  No I wouldn't cook Beetles or Cockroaches but it is fun to watch that crazy guy on tv eat them sometimes.... I know, most Americans are a little squeamish about eating bugs... I can relate.  :)

    Favorite Foods

    The best things I cook are my Pork Chop recipe (not a diet food!), Cheese-stuffed Meatloaf and Gravy (oh, not diet friendly either), Spaghetti Pie, BBQ Pork Ribs, Steak & Potato Soup, Baked "Fried" Chicken, White Chicken Mushroom Spaghetti, Carnitas Quesadillas and Guacamole, and more. :)  I have yet to figure out how to make a good potato salad, no matter how good the recipe I borrow, I always fail on that and it's driving me bananas...!

    My favorite restaurants in our area are Armadillo Willys BBQ (great BBQ Turkey San.), Dino's Burgers, Baldie's Cafe, Mar y Tierra Mexican Food, Dragon House Chinese Food, and a whole bunch of eateries that have already gone out of business - such are the times, I suppose.  I figure our state and this country will ride out this economic "downturn" (is that what they call it? Hah!) and when things come back 'round and we're on the upswing, I will look forward to trying out some new places to add to my list.
