I'm an amateur chef and mother of two who is passionate about using seasonal and mostly unprocessed ingredients to create restaurant-quality meals for my family and friends, while working on a budget and a real world timeline. All of the dishes I share are things I've made for my family and guests and most are very health-conscious. I often adapt lighter versions of recipes I see on TV or find online and I've lost 20 pounds this year, without sacrificing a thing, by eating these flavorful, vitamin-packed, and lightened up dishes. I hope you enjoy them along with me!
My favorite thing to cook is soups and stews, and I almost never use recipes for those. In the cold weather months, I always have at least one in the freezer and one on hand. I also love to make risotto, homemade ice cream, cheesecakes, and main dish salads. I'm famous among family and friends for vegetarian chili, chocolate orange cheesecake, spring vegetable risotto, and vegetable drawer frittata. When I'm not cooking, I love going out for ethnic food such as Indian, Thai, or Vietnamese Pho. I also have a soft spot in my heart for the great American Steakhouses, and the single best meal I've ever had was the chef's tasting menu at Emeril's restaurant in Orlando, FL. I'm married to a culinary school graduate who has really inspired me throughout our life together to try new things, be open to bold flavor combinations, and free myself from strictly following recipes. I love to share my recipes but I encourage readers to use them as I would - as inspiration, but with your own twists!
