Reviewed Za'atar Chicken With Orange Israeli Couscous

    Monday, Dec 21, 2009 on
     |  3 Reviews  |  By Cookgirl
    LinMarie says:

"This was really good! I had some za'atar that was given to me by a friend from Lebanon, and I was looking for another way to use it. I omitted the wine and used wheat couscous rather than the Israeli style, to increase the fiber content. It was absolutely delicious -- loved the pine nuts, and the colors were beautiful with the orange zest and c..."

Reviewed Macadamia Nut Crust for Fish-Mahi Mahi, Salmon, Swordfish, Orange Roughy

    LinMarie says:

"Unfortunatly this didn't turn out well for me. Macadamias are a very oily nut to begin with -- pan frying them in oil made for a very greasy dish. Also, I only had the heat on medium, but the coconut burned quickly. I think in the future I would either bake this in the oven, and/or use a "drier" nut like pecans or almonds."

Reviewed Smashed Fingerling Potatoes With Roast Garlic-Basil Oil

    Friday, Dec 4, 2009 on
     |  1 Reviews  |  By senseicheryl
    LinMarie says:

"Yumm - this was tasty, and very easy. I used cider instead of apple juice, and I happened to have fat-free half-and-half on hand, so I subbed that in for the yogurt. I used a variety mix of fingerlings, and it looked so appetizing with the fresh herbs - great color, and great taste! Served with pork roast and asparagus, it was a comforting meal..."

Reviewed Crock Pot Chicken and Sausage Cassoulet

    LinMarie says:

"This was just ok for us... I used boneless chicken breast instead of thighs, maybe that's where the lack of flavor came from. There was much less liquid than I expected, and it was thin -- I was hoping for more of a stew, this was more like chunks of meat with a little bit of thin sauce. I think it would have been improved by a can of stock mixe..."

Reviewed Raw Beet Salad With Toasted Sunflower Seeds and Goat Cheese

    Friday, Sep 18, 2009 on
     |  1 Reviews  |  By One Happy Woman
    LinMarie says:

"What a beautiful salad! I had never cooked with beets before (wear an apron if you're a messy cook like me -- they stain!) My particular Mr. Wonderful did indeed opt for the gorgonzola... that rich cheese, combined with the sweet earthy-ness of the beets and the salty sunflower seeds was an amazing flavor combination! And I felt like giving mys..."

    Reviewed Low Carb Crab Bisque

    Friday, Sep 18, 2009 on
     |  1 Reviews  |  By One Happy Woman
    LinMarie says:

""Yummm" -- that's all we could say for the first 5 minutes of eating this! Unfortunately my grocery was charging an exhorbitant price for crab, so I subbed in shrimp instead... the only drawback was that is wasn't as thick as I normally like for bisque. I wonder if it was the shrimp? I did use my immersion blender to puree the veggies a bit bef..."

Reviewed Spanish Garbanzo Beans and Tomatoes

     |  4 Reviews  |  By One Happy Woman
    LinMarie says:

"Wow, was this good! Very easy to make, and quite flavorful... The only thing I did differently was to omit the capers, I didn't have any on hand. Served alongside some grilled chicken sausage -- it was a filling and delicious meal! Made for PAC Fall 2009."

    LinMarie says:

"Wow -- easy, healthy, and tasty! I halved this recipe to serve 2, but otherwise followed the directions to a tee. Normally when I coat something in breadcrumbs I'm used to dipping it in milk or egg first... I wasn't sure how the coating would fare after flipping twice, but I was gentle with it and it stayed on wonderfully. Thanks, this is a kee..."

    Reviewed Halloumi and Lentil Salad

    Friday, Apr 17, 2009 on
     |  7 Reviews  |  By Mischka
    LinMarie says:

"Sooo good! I had never had halloumi before, but it's a favorite now... it's true that it doesn't "need" a dusting of flour, but flour does give it a nice crispy crust that goes well with the fresh salad. (I used my grocery's "pan searing flour" that also includes white pepper) The only thing I did differently was to add a little coriander to the..."

    Reviewed Chicken Marbella

    Friday, Aug 15, 2008 on
     |  1 Reviews  |  By KittyKitty
    LinMarie says:

"Wow! Absolutely delicious and SO EASY... I did all the prep the night before, marinated in the fridge, and popped it in the oven when I got home from work the next day! I happened to be out of oregano, so I used basil and a little thyme. I also dislike capers, so I didn't use them. Everything else I followed to a t (but halved the recipe). It..."
