"This is a tasty way to enjoy a favorite Holiday treat and avoid sugar intake as much as possible. Hubby is Type II diabetic and I had gastric bypass surgery almost 6 years ago so we both have had to make diet adjustments. This lets the true pumpkin flavor "shine through". "I may have done something wrong...but my cake came out very "heavy" and dry as heck...nice top crust but very "gluey" on the inside.I used regular sifted flour and Splenda ( regular - not the Splenda Blend for baking so I wonder if this was why my cake came out the way it did ?"

I will admit that I made a few changes: I made my own bread dough and added 1/2 teaspoon salt substitute, 1 teaspoon Mrs Dash and 1/4 cup of fat free grated parmesan cheese to the dough.
