    "These are delicious and I love how they look! Using the Simply Potatoes made them a quick side dish. Even though I don't have a mini-cheesecake pan, I used a muffin tin. They took a bit longer to cook. I substituted crispy bacon and sharp cheddar because I had those on hand. Definitely a recipe I'll use again."
