While I work in the food/entertainment industry I rarely implement my own ideas... hence my passion for cooking at home! My cooking ideas center around a few basic concepts. Fresh is best!, visit your local farmers market and throw away ALL dried herbs and most spices. And allow your passion to contribute to your own recipe style...I love football and chile, in that regard I have incorperated my knowledge and passion and brought about a recipe consisting of fresh (farmers market) herbs, authentic chile's(mexican store 2 streets away), and the best butcher meat available...along with 2 varieties for fat and flavour. This is not supposed to be a recipe, just a theory on cooking...
