    About Me

    I was adopted

    I am Maltese and my partner Elizabeth is American. We both love good wholesome food, and enjoy both preparing it and eating it!

    We decided to buy a little guest house called Ashfield House in the gorgeous Yorkshire Dales which I Manage. Elizabeth works as a lawyer and supports me admirably at weekends and most evenings.

    We live in one of the most amazingly beautiful and bountiful area ~ North Yorkshire. The amazing local produce includes, Swaledale Lamb, Belted Gallaway Beef, and the most succulent pork I ever tasted and free range chickens. The fish we get from various parts of the UK depending on type and season.

    Game is also abundant, especially Grouse, Pheasants and Deer.

    Such a fantastic variety of food resulted in our offering a 'Home Cooking Style of cuisine, using the best fresh local produce delivered daily.

    I particularly enjoy chatting with our diners and making sure that they have enjoyed their meal experience, and exchanging ideas and recipes.

    Favorite Foods

    The dishes I like cooking most of all are

    The English Onion soup, and the Gressingham Duck Breast served with a fig relish and port wine sauce with a side dish of cranberry compote.

    These 2 dishes are our most popular dishes, followed by our Roast Rump of Lamb Marinated in Yorkshire Honey, Encrusted with crushed Pistachios, Ginger & a Kiss of Chilli. Served with a homemade Red Currant and Port Wine Sauce.

    I enjoy good food and wines, and love all type of fish, and especially  fond of all shell fish, washing it down  with or 2 of Vinho Verde, Terras do Minho, or if I am feeling very indulgent a glass of Sancerre ‘La Perrière’ Guy Saget - Loire .

    Another favourite is Spring Lamb or grilled Steaks washed down  with  a generous amount of Pinot Noir. My current favourites are: Saintsbury Pinot Noir 2006 USA and Carneros and Moko Black Pinot Noir, Central Otago, New Zealand.
