    "Great results!! Nice home made texture and not overly sweet or fat laden. I made a half recipe and only had half and half. So, I used 1.5 c. milk and 3 c half and half for the same milk to cream ratio in the original recipe. No eggy taste! The mixture thickened very slightly at about 170 F when I removed from heat....     About Me

    I'm a Texas native where we, like our culture and food are closer to the Mexican capital than to Washington, DC.
    The Joy of Cooking and The Doubleday Cookbooks are my foundations in the kitchen.
    Although I've always eaten meat without apology, I regret and oppose the conditions in which animals are often grown today. Please urge everyone (especially your butcher) to look for and buy the meat of animals given as much free range as possible.
    A pet peeve is the waste of meat through spoilage and leftovers. If an animal lived and died mainly to feed you, please consume it.

    Favorite Foods

    My favorite recipes are those using a few well chosen ingredients that highlight the essence and flavor of the food. Some things seem made to go with each other.
    As for sweets, some of my earliest memories are about ice cream; I eat way too much chocolate.
    A good Italian resturant is like a comfort to the soul; I've also enjoyed the new Pakastani/Afgan/Indian resturants in town lately. I'm a fan of honest (read, HOT) spices in food though I appreciate the more bland comfort food of my roots.
