"This was my first attempt at Borscht...but it won't be my last! I had a surplus of beets and greens from my produce co-op, plus some potatoes and cabbage (yes, I did add some cabbage. Loved the flavor from the caraway seeds! The only other thing I added was a bit of apple cider vinegar. Delish!"

"We made this from the magazine, and we LOVED it! I think the roasted red peppers are the magic ingredient, bringing a new depth of flavor to an old favorite. We used large sea scallops and quartered them after cooking--the trick is to cook them until just translucent. Overcooking will make them rubbery, but ours turned out perfect."

"My grandmother gave me a very similar version of this delicious recipe. I used peanut oil to sautee the veggies, omitted the sugar, and added a teaspoon of ground cloves. I also used 4 cups of veg broth since that's what my recipe called for, but next time I'll try it with the tomato juice. This is an outstanding dish!"
