I’m a writer, artist, artisan, photographer, and health nut who spends most of my time dabbling in the arts, the arcane, and the inane. I possess nine rescued cats, two budgies, and degrees in psychology and history. Other interests, practices and hobbies include cycling, yoga, minimalism, conservation, nutrition, fashion, foreign languages, and pretending to be a rock star. After wading through 10 years of various, systemic health issues, I have finally been diagnosed with autoimmune thyroiditis -- Hashimoto's disease -- and IBS. The past 10 years have taught me a lot about health and healthy living, and my website is dedicated to providing a diet and lifestyle guide for those struggling with chronic illness (particularly of the autoimmune variety) in an unfriendly and often dangerous environment. My dishes are dairy-, gluten-, soy-, sugar-, GMO-, caffeine-, and alcohol-free as well as vegetarian.
I don't eat out because my autoimmune-friendly diet omits common ingredients like gluten, corn, dairy, and sugar, but I love to cook and am constantly exploring and adapting new dishes from all over the world. I fawn over fruit salads and smoothies, veggie and chip dips and spreads, and fresh, crisp salads. My spicy sweet potato fries are a family favorite.
